Ingredients

  • 2 eggplants

  • 2 cloves garlic, chopped

  • 1 lemon

  • 200 g tahini

  • Sea salt

  • Olive oil

  • Za'atar (oriental spice mixture)

Instructions

  • Cook eggplants and garlic cloves with the peel at 220 °C in the oven or over an open fire for about 20 minutes (pierce eggplants with a knife). The peel may be roasted with pleasure strongly. 
  • Scrape the insides of the eggplant and garlic from the skin with a spoon and mix together with the tahini and the juice of the lemon and season with salt. 

  • Spread the baba ghanoush flat on a plate and drizzle with olive oil and sprinkle with zatar before serving.
