Ingredients

  • 1 large onion

  • 2 garlic cloves

  • 300 g potatoes

  • 2 tablespoons olive oil 

  • 125 ml white wine 

  • 1 liter vegetable broth 

  • 200 ml vegetable cream 

  • 1 ½ black radish

  • Salt and pepper 

  • some chives, in rolls

Instructions

  • Chop onion and garlic. Peel and dice the potatoes.
    Sauté onion and garlic in oil. Add potatoes and sauté briefly. Deglaze with white wine and reduce slightly. Add broth and simmer for about 15 minutes. Add salt and pepper.
  • Peel black radish and cut into fine slices. Put some slices aside and add the rest to the soup and simmer again for 10 minutes. Puree the whole. Add vegetable cream and bring to a boil. Season to taste with salt and pepper.
  • Add the remaining black radish to the soup and serve sprinkled with the chive rolls.
